Experiment with spice and veggie combinations that you enjoy. I like to use garlic, cumin, tumeric and oregano on most everything! Roasting brings out the natural sweetness in any veggie – Enjoy!
Serves: 2-4 (depending on how many veggies you use)
2 cups of each of your favorite cut-up veggies (such as Cauliflower, Onions, Broccoli, Brussels Sprouts, Green Beans, Carrots, Squash, etc.)
Salt & Pepper
Desired spices (such as cumin, turmeric, garlic, thyme, basil, oregano, etc.)
- Preheat oven to 350 degrees.
- Clean and cut all veggies in roughly 1-inch cubes, so they are a consistent size. Toss with olive oil and desired spices – use your imagination and choose whatever you like.
- Prepare jelly roll pan with olive oil and spread out veggies in a single layer. Use 2 pans if needed.
- Roast for about 25 minutes or until fork tender, stirring half way through.
